Exceptional and painstakingly created by an award-winning micro distiller, Sacred Gin packs a punch and is stylish as well as flavoursome. The floral notes come to a head in the flavour, with spices carrying the drink to a new level, smoothness ruling throughout.

Only the Pons family know the identity and proportion of this valuable ingredient, which is added behind closed doors and without witnesses, at the start of each distilling. For some products supply can be inconsistent, whether that is at the brewery itself or how often we or its supplier imports it. The grapes in the base alcohol intentionally don't come through, but help give Xoriguer gin a distinct personality.The spicy heat which builds is satisfying without being overpowering, adding to the complex flavour profile Sacred offers.

Gin Xoriguer is the result of a distillation in traditional copper stills, using high quality wine alcohol (eau-de-vie) and carefully selected juniper berries, which come from the neighbouring Mediterranean mountains, together with aromatic herbs. A short stint in oak barrels just before bottling adds an extra measure of smoothness, giving this gin a unique, aromatic edge.Also recommended is a visit to the Xoriguer distillery in Mahon and sample some (or all) of the many flavours. Xoriguer’s floral and aromatic nose, together with its warm and herbaceous notes needs a sharp citrus kick from a chunky piece of freshly cut lemon peel, some crushed juniper berries to enhance the main ingredient used in the distillation process and a crisp tonic water like Schweppes 1783. The name of the gin was chosen in honour of the old windmill used for successive generations of the Pons family, which now appears on the labels of their bottles.The gin is distilled in-house using grape alcohol rather than the typical grain alcohol, and the botanicals remain a closely guarded family secret.
