Of course, the one I used for this whole smoked turkey recipe was The Big Easy® Smoker Roaster/Fryer & Grill. It lets you smoke, roast, fry and grill all at once. It’s very impressive that one device can have so many functions and features. All pieces on the fryer get hot — really hot. I learned this the hard way when, without thinking, I reached to pull off the lid and nearly burned the fingerprints off my right hand. Be sure to have heat-safe gloves handy (none are included, but should be?) for handling the fryer and attachments.

This dish is very easy to complement with side dishes. I roasted some carrots and potatoes. Roasting sweet potatoes with some thyme is also a classic. Also, to add some greens to the entire meal, why not include green beans or broccoli? Generally, you can expect it to take approximately 10 minutes per pound. Cook times are included as a general guideline. Meat doneness is ALWAYS determined by the meat’s internal temperature, not time elapsed. This, of course, is only possible when the kitchen sink is deep enough. Also, you won’t be able to use the kitchen sink for a while once it has the huge bird in it. Great that I didn’t need a water pan:Due to the infrared heating technology, there is no need for a water pan. This means less clean-up and maintenance required. For an easier cleanup line the bottom of the cooking chamber with foil. Less clean-up and maintenance meant I had more time to enjoy meals with my family at end of a cook. Cooking a stuffed turkey in the infrared fryer is not recommended, as it takes too long to heat the middle to the recommended safe temperature of 165 degrees. (However, the USDA doesn't recommend stuffing a turkey for food safety reasons, anyway.)
