To decorate I used three lots of regal ice fondant in sky blue and one in baby pink. First add a layer of buttercream (I chose chocolate of course). Then after kneading the fondant until it was pliable I rolled out the blue fondant into a circle and dropped this across the cake. With the smoother I have shaped the dress, but having overlapping sections show movement in the material. With the excess fondant cut out a strip to wrap around the body of the doll to form the bodice of the dress. You will need double maybe even triple the amount depending on how tall your Barbie is. For this style and this size barbie, you need 2.5 Cake Mix boxes. I just keep the one cake layer that I don't use and use it for something else, like cake pops or cakesicles. Add some purple food coloring gel to a bunch of frosting. Then mix until well colored. Add more food coloring as necessary. I cooked it at 160C in a fan assisted oven for approximately 50 mins or until a skewer inserted comes out clean. This tin comes with a heat conducting central pole to help cook the cake thoroughly which is great as there is a lot of cake batter. I have cooked half sphere cakes before and the timings can be all off so if not cooked after 50 minutes be patient and keep trying in 5 minute increments to see if fully cooked. If worried about the top burning just cover with tin foil – it will cook eventually!

Ice cake. Tint icing medium coral using color combinations provided. Place cake on cake circle and ice cake smooth. Place on Cake Dividing Chart. Using tip of 9 in. spatula to lightly mark lines in icing, divide cake into eight sections. Using 11 in. spatula for bottom of dress and 9 in. spatula for top of dress, make scallops around entire dress, starting at one dividing line and moving down and up to second line.
