Put the flour and salt in the bowl of the food processor and pulse a few times. Add the butter and lard (or all butter if preferred) and continue to pulse until the mixture resembles coarse crumbs. Bake at 180C/fan oven 170C/gas mark 4 for 30-40 minutes, cool slightly and serve with a dusting of icing sugar, or with rum butter and vanilla ice cream. Transfer the crumbly pastry dough to a lightly floured work surface and use floured hands to fold the dough into itself until Steak and kidney. Cheese and onion. Curried veg. Apple.
