There is no single "right" way to cook dried rice noodles. There are several different but similar methods, and when you start cooking rice noodles fairly regularly you'll settle on a method that you like best. This recipe works well with a wide variety of rice noodles. I’m fond of brown rice chia noodles, but white rice noodles work well, too.
