The sip finishes dry with lingering butterscotch and oak, leaving behind a comforting warmth while sustaining a medium length. What is the difference between Macallan 12 Double Cask and Triple Cask? First, barley grains undergo the malting process to activate enzymes needed for fermentation. The Macallan uses Minstrel barley grown in their distillery’s estate to ensure the highest quality grains.

Triple cask whiskeys typically have more complex flavour profiles, having undergone an additional course of maturation from double cask whiskeys. The Macallan 12 Double Cask is aged in sherry-seasoned oak barrels, while the Triple Cask is aged additionally in ex-bourbon casks.The difference between a double and triple cask whiskey is the number of barrels the whiskey has aged in before it is bottled. In the case of the Macallan 12 Double Cask, it also means that the whiskey matured in two types of oak: American and European. Macallan whisky derives its iconic colour from the wooden casks in which it aged. Each tree used to make the casks will impart a slightly different flavour, making the individual bottles of Macallan whisky truly unique. Flavour-wise, the Double Cask is richer and rounder than the Triple Cask due to the 100% sherry maturation. However, the latter has a lighter and brighter character due to the bourbon influence. The Macallan 12 Years Double Cask is a testament to the distillery's expertise in crafting fine single malt whisky. Its aroma entices with a delightful combination of malt, honey, apricot, and subtle hints of brown sugar, spice, and dried fruit. As you take a sip, the palate unfolds to reveal flavours of honey-infused cereal, apricot, and a touch of copper, complemented by zesty orange peel and spice. The finish is medium in length, leaving behind a satisfying blend of dry maltiness, spice, and dried apricots. Unlike The Macallan, the Lagavulin 16 Years 43% is considered to be a whiskey for experts with complex flavour and a long, dry finish. The Essence of Tradition and Elegance

With up to 80% of the quality of Macallan's end product being down to the wood that the cask is made out, the brand takes the time to source the right materials. By working with a company in Spain, choosing the right oak trees, and creating casks out of them, the flavour of the Macallan whisky is created.

After fermentation, the alcohol is distilled in copper and spirit stills to extract the “heart” of the distillate. The 12 Double Cask scotch is produced in stills smaller than the average size, which allows the copper still to impart more of its flavours onto the spirit. This practice also gives the master distiller better precision in deciding the cut ratio that runs off the still. The Macallan 12 Year Old Double Cask has a golden colour that resembles the glow of evening sun. The nose has caramelised apple, candied orange, butterscotch, ginger, and a hint of gentle spices.
