After an intensive period of study, distillers courses, trial distillations and exams, Nick made the first batch of Three Wrens in June 2019, and knew he had made something truly special. I wasn’t sure at first, thinking that “crumble” flavours wouldn’t work in a gin, but I stand well and truly corrected! Or in the case of the potion magicked up by Three Wrens Distillery, how can you produce a gin that tastes of apple crumble? A hand-made copper pot still named Valerie is used for production and all of the gins are single-shot, meaning dilution only uses water as opposed to a combination with neutral spirit, with each batch producing around 100 bottles.
