I had been concerned it wouldn’t be as fresh as when I can get to an Asian supermarket in person as some people report it arriving not fresh.

For higher taste and nutritional content choose a tree ripened fresh dragon fruit in organic quality. The outer rind is not edible and whilst it does start to wilt and perish once picked from the cactus, it does a great job of protecting the edible and super juicy flesh inside. The fruit can be pureed and used as a filling for cakes, tarts, and pastries, adding a burst of colour to any dessert plate. Another variety — referred to as yellow dragon fruit — has yellow skin and white pulp with black seeds.

The same goes for lunch: just sprinkle some dried dragon fruit on your salad and convince yourself of the sweet and sour composition that also looks good. In addition, it is rich in fibre, which helps to increase the feeling of satiety, thus reducing food consumption.

That's why we have subjected our exotic favourite to a drying process to minimise the water content - and thus maximise the taste.The red-fleshed Dragon fruits are rarer than the yellow skinned variety, and are not nearly as widely available as the white-fleshed variety. Immediately it falls like scales from the eyes: Their name has received the exotic fruit by their striking scales on the shell, because they are visually probably reminiscent of dragon skin.
