Since the rock layers from which the Belgian Whetstone come are very thin, the whetstones are glued onto a carrier of slate stone. They are the most aggressive and remove more material when sharpening, resulting in a less polished finish. To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. What we need is a liquid with a low enough surface tension to get into the pores and lift out (through surface tension) the stuff we don’t want there.

In the meantime, however, there are also very good, hard-bonded waterstones that are suitable for sharpening high-alloy steel grades. Waterstones have soft clay-like binders which give up their particles, allowing them to roll over to expose new sharp facets and new crystals. Oil stones require a light mineral oil (make sure it is food friendly if you are sharpening your kitchen knives) to suspend metal and abrasive particles away from the stone’s cutting surface which keeps the stone free-cutting. Trueing of hollow-ground oilstones is done in the same way as for waterstones, with trueing plates or water sandpaper.Please do use whatever tool you have at hand to create this shape, cabinet rasps, moulding planes, files, block planes will all offer something that gets the job done.

If you look at the pictures below, you will see that I have switched up my grip when sharpening the other side of the blade. As a result, the metal from the object being sharpened and small pieces of abrasive that break off the stone become suspended in the lubricant. Norton stones, however, are relatively coarse and the grain size gap to the Arkansas whetstones is quite large. Benchstones are durable, wear slowly, and retain their flatness significantly longer than waterstones. The alloy components of high-alloy steel types are often very coarse-grained, which wears out the soft stones quickly.

Mineral oils, such as 3-In-One or Norton’s specially formulated honing oil, work well on coarse synthetic stones. In addition, this friability means that India stones remove slightly less metal during the sharpening process, extending the life of your knives and tools. If you are honing small tools, or small surfaces of large tools (such as curved edges), you’ll probably do better with stones that have a harder matrix. Bits of swarf can get trapped in the pores of a stone, just like dirt gets trapped in the pores of your skin.

Of the Arkansas stones mentioned above, there are very fine-grained specimens with which the edge can be polished very well. With the comparatively softer waterstones, used, dull abrasive particles break out of the surface more quickly and make room for fresh, sharp particles.
