As the smoke fades, fruity sweetness comes through - more agave and green apple, along with peppery spice, mint and eucalyptus. Eucalyptus and mineral aromas compliment hints of green apple, pear, fresh citrus, and red chiltepe, with light smoke and lingering heat. Our aged mezcals are rested in a combination of new and used American oak, medium char barrels, a unique and complex taste for those who enjoy sipping spirits. In the case of Ilegal Joven, the Espadín agave once again proves its versatility by triggering aromas of citrus, green apple and a hint of white pepper.

This complex character is nuanced by delicate tones of smoke and hints of liquorice - and a long, silky finish. Like Tequila, mezcal can be unaged (‘joven’ or ‘young’), or aged in wood for months or sometimes years.I’m a peaty scotch drinker, so I’m not afraid of smoke or intense flavors, but the bottle I tried was rough in a not good way, without being especially interesting. The varieties on offer today are based upon Espadin Agave and crafted in small batches with traditional pot stills. Marquez emphasizes that Ilegal isn’t attempting to showcase a singular or superior style of production, but is rather pursuing its own preference.
