Nose: On the first whiff, this whiskey bursts out of the gate with honey, lemon zest, and short crust pastry. Then as the whisky sits in the glass, rich stewed fruits arrive with a dollop of coconut and tangy cream. Orange zest, apples and pears. This is an incredible nose – one I would happily sit for hours and enjoy. These differences are not carved in stone; the Irish Whiskey Act of 1980 outlines only the broad parameters necessary to label a product “Irish” whiskey. Basically, it requires that whiskey be composed of grains (such as barley, wheat, corn, and rye), be distilled to no more than 94.8 percent alcohol, and be aged at least three years in wooden barrels. These guidelines leave producers a lot of leeway to define their styles. Spice, vanilla and toasted nuts give way to a sweet and coppery single pot still character that fades out nice and slow. Redbreast’s popularity reached a tipping point a few years ago with its appearance on the shelves of the better UK supermarkets, with the brand’s signature judiciously-sherried style winning over an ever-growing army of fans. New line extensions have followed, with the 15 year old, originally a one-off special for a French retailer, being added to the permanent range in 2010 and the extraordinary 12 year old cask strength launched at the end of 2011 to rapturous acclaim from all quarters.

Mmmm, I tell ya, that Single Pot Still character stirs something in me every time I smell it. Rich, sweet and a little oily that wonderful character is accompanied by notes of fruit, vanilla, nuts, spice, citrus and some light sweet, almost floral, notes that drift through on the tail. Redbreast 21 is a blend of whiskeys matured up to 25 years, hand-selected by Master Blender Billy Leighton. Bottled at a nice 46% ABV, this whiskey is matured in ex-sherry and ex-bourbon casks. The result is almost a near masterpiece of Irish whiskey that can be attributed to its superb cask selection.
