As with most sponge cakes, this fondant-covered sweet shop Victoria sponge is best eaten the same day. Working gently, ease the sugar paste down the sides of the cake. Sugarpaste can tear, but if you encourage it rather than pull on it, it will adapt to the shape of the cake.
