About this deal

They taste so good, you’d never believe they were good for you – that might be my favorite thing about these coconut bliss balls. My second favorite thing? They’re no-bake chocolate coconut balls, so it’s about as low-effort as making a dessert can get. Place them on a parchment-paper-lined baking sheet. Chill them thoroughly in the fridge or freezer for at least 30 minutes. For a more intense chocolate flavor, you can double-dip them. You can even experiment with different colors of chocolate to create an exciting outside pattern. Simply allow the first coat of chocolate to set around the coconut before dipping it into melted chocolate for a second coat. Research shows that this starch is a resistant starch, meaning that it doesn’t impact onto blood sugar levels.

The main ingredient in these coconut balls is a superfood - coconut oil. Coconut oil is very healthy and if you still haven't incorporated it into your daily diet, DO IT! It helps in lowering bad cholesterol, improves the absorption of vitamins and minerals, has a positive effect on a blood sugar, and preserves the health of our heart. Also it strengthens the immune system and improves digestion and helps with weight loss. If you want something sweet and satisfying, my three-ingredient chocolate coconut balls are easy to make, full of flavor, and healthier than store-bought.Coconut oil also contains medium chain fatty acids which is easily digested in the human organism and almost immediately converted into energy. So these sweet coconut bites are actually like a small healthy energy bomblets. I formed little bite-size coconut balls with my hands, and I used a teaspoon for dosing. When you put a piece of the mixture in your hand, coconut oil will slowly melt so you can shape your ball nicely. Once you made a ball, roll it in a shredded coconut immediately. As the coconut mixture is chilling, melt the chocolate in a small bowl. You can either do this in the microwave in 20-30 second bursts until melted (stir in between so the chocolate doesn’t burn) or using a double boiler or the bain marie method. Now that I know all these wonderful things about coconut and how its consumption contributes to my health, coconut is my favorite superfood beside chocolate, and a must have in my kitchen. I'm really a big fan of coconut. A BIG fan! But until a year ago I didn't know that eating a coconut is actually really healthy for my body. To be perfectly honest, until a year ago I didn't know much about that tropical splendor.

For a more intense chocolate flavor, why not try double-dipping the chocolate coconut balls? You can even experiment with different colors of chocolate to create an exciting outside pattern. Simply allow the first coat of chocolate to set around the coconut before dipping it into melted chocolate for a second coat. StorageBecause salt can have a stimulating effect on the body, Nutritionhelp generally recommends that sodium from cheap table salt should be kept low in the diet. If you don't want to roll the balls, you can make tiny bites in mini muffin cups instead. Simply press a ball of the coconut mixture into a muffin cup, chill thoroughly, then top with a layer of melted chocolate. And since I'm a huge fan of energy balls - Turmeric Energy Balls and Carrot Cake Ballsare my favorite, making these Healthy Coconut Bites was just natural thing to do when I rediscovered coconut.

For making these Healthy Coconut Bites you will need only 4 ingredients - shredded unsweetened coconut, coconut oil, honey and vanilla extract. One of these fats is Lauric acid, which as been found to encourage helpful HDL cholesterol levels in the blood coconut oil: is also a must for this recipe as it hardens at room temperature. You'll also use a couple of teaspoons in the chocolate coating. If you’re looking to upgrade your candy selection, coconut is a great ingredient to incorporate into your recipes. Not only is it naturally sweet, but it’s also a source of healthy fat, helps to keep your teeth and bones healthy, and can even keep you hydrated. Ingredients You can leave it as it is or sprinkle it with a little sea salt – this will enhance the chocolate flavor. You can leave it as it is or sprinkle it with a little sea salt– this will enhance the chocolate flavor. Melt the chocolate slowly and gently until smooth and spreadable. We don’t have a microwave, so I had the best results melting this in a stainless steel bowl placed in a hot oven for about 10 minutes.

Dip the chilled balls into the melted chocolate. You can use a spoon, fork, or wooden skewers (so they look more like little cake pops) to help you dip them. Make sure to get the coconut completely covered in chocolate. For an even healthier alternative to the chocolate-covered option, you can enjoy the coconut balls on their own. They make for a delicious coconut truffle that is still rich and creamy. Cover with chocolate For example, I didn't know that you can make coconut milk out of coconut flour at home. Or that there is a coconut oil you can cook with, or that you can replace all-purpose white flour with coconut flour in making cakes or bread. If you’re making your own homemade shredded coconut for these healthy treats, you’ll need to start there. You can follow my easy guide for making your own desiccated coconut here, covering everything from how to expertly open your coconuts to peeling and then drying the fresh meat to turn it into delicious little flakes. Make and shape the balls If you’re using white chocolate, you can experiment with food colorings and dyes (though use very sparingly as they’re strong!) to create a rainbow of colors.
