Pilau Rice Seasoning: If you don’t have a lot of time to season your rice, you can buy ready ground pilau seasoning. Ours includes Salt, Cumin, Onion, Garlic, Turmeric, Paprika, Mustard, Cardamom, Cloves, Poppy Seeds and Cinnamon.To make rice pilaf, sauté onion and garlic in butter. Add rice and sauté for a few minutes more. Add broth and bring to a boil. Cover and simmer until rice is tender and most of the liquid is absorbed, about 15 minutes. To make sure you get lovely fluffy rice, wash it in several changes of cold water, then leave to soak for about 30 minutes in fresh cold water. If you don't have time for this, place in a sieve and wash under the cold tap for a minute or so. You will need about 2 tablespoons of this spice mix to make pilau rice (1 ½ cups of dry rice). Use more spice if you prefer your rice spicier. First, fry the basmati rice over medium heat with the oil and ground spices until the rice is yellow from absorbing turmeric into the grains. In Indian rice recipes, basmati rice is usually used. Other long-grain rice varieties may be used instead.
