About this deal

I made this cake for one of my kid’s birthdays – all they wanted was a colourful rainbow cake decorated with sweets. If, like me, you have limited cake decorating skills this recipe is perfect. The rainbow layers look so impressive it doesn’t need a lot of fancy decoration on top. How to you make a rainbow cake from scratch? Cover the bowl if you can and start on a slow speed so the icing sugar doesn’t fly everywhere. Once the icing sugar has started to mix in, turn the speed up and mix the icing for a least 5 minutes. The longer you leave it the softer and fluffier it will be. Assemble the rainbow layer cake

Carefully trim the tops off any cakes with a bread knife that look at all uneven. Then put the first layer down on your cake stand or plate. Spread a little buttercream icing on top and spread it out with a palette knife. No. Unless you’ve got 6 cake tins and a large oven i’d recommend making a few layers at a time. I don’t think cakes turn out as well if the batter sits for a long time so I make mine in batches. Beat the butter and sugar together in a stand mixer or with a handheld electric whisk on a high speed until pale and fluffy. Turn the mixer to low speed and add the eggs bit by bit, mixing on high speed after each addition. Add the vanilla, then add half of the flour. Mix until combined, then add the rest of the flour and mix until you have a smooth cake batter. Finally, add the vanilla. If you have young children you might need to hold the spoon while they pour in the vanilla or vice versa. Older children should manage this on their own. I’ve listed the ingredients for all the layers as well as for making two layers at a time. What can I use instead of self raising flour? Divide the remaining buttercream into 6 equal portions and place in bowls. Colour the buttercream in the same way you coloured the cake batter, then place each colour into a separate piping bag.

Next, some elaboration on the method. The method to make this cake simply utilizes the fact that the rainbow cake batter is on the liquidy than the solid side, and as such will be able to spread. Hence, when we split the batter into six portions to be separately coloured and pigmented, we want the base to have the most batter while the top layer has the least batter ( I will explain to you how I do the calculations later! ).

The five 18cm round pans allow you to bake all of the luscious layers at once, instead of needing to clean and refill a pan in-between bakes, so you can get your oven switched off sooner, and get on with the exciting part – assembling your rainbow cake!
