About this deal

Whisk egg whites until stiff. Fold in caster sugar, cornflour and vinegar. Line a swiss roll tin with baking parchment. Lightly spread the mixture evenly in the tin. Bake in oven 150°C for 45mins until lightly golden. Immediately turn out onto a large piece baking parchment. Remove the parchment in which it has been baked, then roll on the LONGEST SIDE. Cover with foil until cool. Whisk the cream, fold in the Kin Toffee Vodka and the crushed maltesers. Unroll the roulade, fill with the cream mix and re-roll. Dust with icing sugar to serve. Tip crab apples into preserving pan (no need to cut them up). Add enough water to just cover them. Bring to the boil, simmer and stir now and then until the fruit has turned mushy.

They may be small and sour, but you can make some amazing recipes with the fruit of the crab apple tree. They have an exceptionally high pectin and acid content which makes them ideal for setting fruit jams and jellies. They also have an excellent, tart and tangy apple flavour. To make toffee, place all ingredients except apples in a pan and bring to the boil. Stir until sugar has dissolved. Then boil rapidly for 2-3 minutes, until a small blob dropped into a cup of cold water forms a soft ball. Don’t take your eye off as it burns easily.

Allow to cool a little and then pour into a jelly bag and leave to strain overnight into a large bowl. Don’t squeeze the bag or the jelly will be cloudy. Vodka – Everyday vodka is perfect here. Nothing too expensive, but nothing too rough. Supermarket own brand, or a medium quality branded. For a butterscotch toffee vodka use Werther’s or a traditional butterscotch. Alternatively, try a Daim Bar vodka! Fill up the jar the rest of the way with vodka (about 2 cups, may take more or less depending on how much room the apples take. Crab apple liqueur

I know this was the sensible approach but I do miss some of the luxuries that we had before and gave up this time to increase the size of the house. Air-con and solar power are our biggest losses.....and next projects! I find that a hard toffee gives a better flavour than the soft ones. Quantities are flexible in this toffee vodka recipe. If you prefer, you can increase the amount of toffee to give a stronger, sweeter flavour. I chose apple because of the flavors in my dish but you can infuse anything into vodka (and probably other liquors though vodka is ideal due to its minimal taste). When I was searching for my beet breakthrough recipe last fall, someone shared the idea of beet infused vodka (not quite there yet). Step One – Unwrap the toffees and add to a large jar. No need to smash them or anything else. Let’s keep this as easy and as fuss free as we can! Pour over the vodka and seal.

I used to love snow when we lived in the UK, but I am acclimatised to Australia now!!! The 15ºC winters feel freezing!!!!!I adore toffee vodka. It is sweet and incredible easy to drink. It’s a fabulous winter beverage and it makes for the perfect Christmas gift. I have been making this recipe for years now and it’s always a big hit with the family and friends. To make toffee vodka you simply combine toffees with a nice quality vodka in a mason jar. Shake the toffee vodka together every few hours until the sweets dissolve, and then pour into a bottle ready for drinking or gifting.
