No hard to remove anti rust coating anymore, seems Matfer used to come with some of the hardest to remove coatings. It is among a handful of suppliers worldwide that are able to provide a complete range of kitchen utensils and equipment for any foodservice establishment.

For this assignment I spoke to some professional cooks who regularly use carbon steel pans, and whose experience with the pans ranges from recipe development and testing to restaurant line cooking. Once that round is finished, simply wipe out the pan with paper towels, heat a bit more oil over medium-high heat and give the pan one more thorough wipe with paper towels. Now they are nice and smoooooth though and a pleasure to use with metal utensils, but I will probably oil them a bit more often after use now. The Matfer Bourgeat Black Carbon Steel Fry Pan, when seasoned correctly, takes on an appealing blueish black hue.

Considering carbon steel (just like cast iron) gets better with age and use, I believe this pan would make a worthy investment for any home kitchen. Much better to cook with than nearly perpendicular sides of cast iron or a rounded interior wall slope. Black carbon steel is a natural mineral material free of any harsh chemicals or coatings, and is PTFE and PFOA free.Having used plenty of carbon steel pans in professional kitchens, my criteria for a truly exceptional pan were high.
